Mumbai Street Style Vada Pav Recipe To Pair With Chai

Ingredients for potato filling

Two teaspoons of oil, half a teaspoon of mustard powder, a pinch of hing (asfoetida), a few curry leaves, one inch of ginger, two garlic cloves, one dry red chilli, two tablespoons of coriander leaves, two potatoes, a pinch of turmeric, a teaspoon of salt and one tablespoon of lemon juice.

Ingredients for besan batter

Three-fourth cup of besan, one tablespoon of rice flour, one-fourth teaspoon of turmeric, salt, red chilli powder, baking powder, a pinch of hing, half a cup of water, oil for deep frying, 6-8 ladi pav, 6-7 green chillies, mint chutney, tamarind chutney, and garlic chutney.

Prepare to temper

Heat some oil and add cumin seeds, hing, chopped ginger and green chillies. Saute it until it starts to crackle.

Prepare the potato mixture

Now, add boiled potatoes, salt, turmeric and salt to it. Cook the mixture for 2-3 minutes until soft and fragrant.

Prepare besan batter

Take a bowl and add besa, salt, turmeric powder and water. Stir it well until the batter is smooth and creamy.

Fry bondas

Now, make small balls of potato filling. Di[p the balls in besan batter and deep fry them in oil until golden brown and crispy.

Assemble vada pav

Now, slit open ladi pav and apply garlic chutney, mint chutney and tamarind chutney. Add fried hot vada in between. Serve it with green chillies.
