Ingredients
One cup of rice, salt to taste, half a cup of curd, half a cup of water, a teaspoon of ENO or baking powder, a teaspoon of lemon juice, a teaspoon of oil, a teaspoon of mustard seeds, 5-6 curry leaves, 1-2 chopped green chillies and grated coconut.
Prepare batter
Take a bowl and add rice flour, curd, salt, and water. Whisk it well until smooth and there are no lumps. Cover and leave it for 10-15 minutes.
Add rising ingredients
Add ENO or baking powder and lemon juice to the prepared batter. Mix it gently in one direction until the batter is light and airy.
Steam dhokla
Grease a plate and pour the prepared batter into it. Steam the dhokla for 15 minutes on a medium flame. Use a toothpick to check softness and texture.
Prepare to temper
Heat oil in a pan and add curry leaves, mustard seeds, and green chillies. Saute it until it starts to sputter and pour this over steamed dhokla.
Garnish and serve
Let the cool down to room temperature and cut it into small squares. Garnish with grated coconut on top and serve with tamarind chutney.
