Ingredients
Three chopped onions, one and a half tablespoons of mustard seeds, one tablespoon of fenugreek seeds, one tablespoon of cumin seeds, one and a half tablespoons of lemon juice, one tablespoon of red chilli powder, one tablespoon of gram masala, one tablespoon of ginger, salt to taste, two chopped green chillies, and 2-3 tablespoons of mustard oil.
Dry roast spices
Take a pan and add fenugreek seeds, mustard seeds, and cumin seeds. Dry roast the spices on a low flame and grind them into fine powder.
Add the spices
Take a bowl and add sliced onions, chopped green chillies, chopped coriander leaves, red chilli powder, gram masala, salt, and lemon juice. Combine everything evenly.
Prepare tempering
Take a pan and heat mustard oil in it. Add garlic, roasted spices, red chilli powder, gram masala, and salt.
Add tempering
Turn off the flame and add the tempering over the onions. Toss it well to combine everything and store it in an airtight container.
