Ingredients
One cup of dates, one tablespoon of tamarind pulp, half a cup of jaggery, half a tablespoon of roasted cumin seeds, one-fourth tablespoon of red chilli powder, salt to taste, one teaspoon of black salt, one-fourth teaspoon black pepper, and water according to consistency.
Soak dates
Take a bowl with warm water and add dates to it. Keep the dates soaked for 30 minutes to soften them.
Blend dates
Once the dates are softened, add them to the blender with tamarind pulp. Blend it until nice and smooth.
Add spices
Now, add ginger powder, roasted cumin seeds, red chilli powder, black salt , black pepper, and black pepper.
Cook chutney
Take a saucepan and add the dates puree to it. Cook it for 10 minutes on a low flame while stirring continuously.
Add jaggery
Add jaggery powder to the chutney and let it simmer for 5-7 minutes. This will balance the flavours and add natural sweetness.
Serve chutney
Let the chutney cool down and store it in an airtight container. Pair this as a dip with paratha or with chaat.
