Ingredients

Three tablespoons olive oil, 225 grams paneer cheese, four garlic cloves, 150 spinach, one teaspoon cumin seeds, half teaspoon chili flakes, half teaspoon salt, olive oil, two eggs, salt, four small tortilla wraps.

Fry the Paneer

Heat two tbsp olive oil in a pan, fry paneer for five minutes. Mix it occasionally till it gets golden and then set aside.

Prepare the Spinach Paste

Add one tbsp oil, cook chopped garlic till it gets brown but not burnt. Afterwards, blend spinach with 150ml water into paste.

Combine Paneer and Spinach

Add paneer to spinach paste and mix it well. Cover with a lid and simmer over low heat while making the rolls.

Cook the Tortillas

Heat oil in a small pan, break eggs into a shallow bowl. Dip tortillas in egg and cook for 30 seconds each side.

Assemble and Serve

Spoon the paneer mixture into tortillas and roll them up. Do ensure no cheese falls out and serve immediately.
