Ingredients
Two potatoes, one tsp coriander seeds, half tsp saunf, one chilli, half tsp ginger paste, one tsp red chilli powder, half tsp chaat masala, half tsp amchur, one-fourth tsp ajwain, two pinch hing
What else you need?
Two tbsp coriander, half tsp salt, one cup besan, two tbsp rice flour, one-fourth tsp turmeric, one-fourth tsp baking soda, half tsp salt, half cup water, eight chillies, jalapeno, oil.
Prepare the Filling
Take boiled potatoes and mash them. Afterwards, cook with coriander seeds, saunf, ajwain, hing, ginger paste, and spices till it gets well mixed.
Prepare the Chillies
Take green chillies and remove the seeds from them. Stuff them with the prepared potato filling, pressing gently to seal each chilli.
Make the Batter
Prepare a mixture of besan, rice flour, turmeric, baking soda, and salt. Now, add water. You need to whisk to form a thick, smooth batter.
Heat Oil for Frying
In a deep pan over medium flame, heat oil. You make sure it’s hot enough for frying without burning.
Fry the Mirchi Bada
You can dip the stuffed chillies into the batter and coat evenly. Start to fry till it gets golden brown and crispy. Drain on paper towels.
