Ingredients
Three cups water, nine baby corn, half cup maida, one-fourth cup corn flour, half tsp Kashmiri red chilli powder, one-fourth tsp pepper, half tsp ginger paste, half tsp salt, half cup water, oil for frying. One tsp corn flour, one-fourth cup water.
Other ingredients
Three tsp oil, green chilli, one-inch ginger, three cloves, four tbsp spring onion, half onion, half capsicum, two tbsp tomato sauce, one tbsp vinegar, one tbsp soy sauce, One-fourth tsp pepper, one-fourth tsp sugar, one-fourth tsp salt
Prepare the batter
In a bowl, mix half a cup of maida, one-fourth cup of corn flour, half a tsp of Kashmiri red chilli powder, and one-fourth tsp of pepper, ginger paste, and salt. Add enough water to the mixture to achieve a smooth batter.
Coat baby corn
For coating dip the baby corn. In a pan heat the oil. Once it is hot enough, fry the baby corn that we had coated until it turns golden brown and crispy. Drain the oil on a paper towel.
Prepare in Sauce Mixture
In one bowl, mix one tsp of cornflour. Now, add a one-fourth cup of water, using it as a slurry. Keep that aside.
Add aromatics Add three tsp of oil to another pan; add chopped green chillies, ginger, garlic, and sauté for a minute until fragrant.
Add vegetables Stir fry the chopped vegetables like spring onion, onion, and capsicum. Mix it on high for three minutes till crisp.
Add sauces and seasonings Mix two tbsp of tomato sauce, one tbsp of vinegar, one tbsp of soy sauce, one-fourth tsp of pepper, one-fourth tsp of sugar, and one-fourth salt.
Combine Baby Corn & Sauce
Putting the fried baby corn into the sauce mixture and adding the cornflour slurry; everything should be tossed so that the baby corn is well-coated in the sauce. Serve it hot!
