Ingredients
2-3 cayenne peppers, 2-3 dried red chillies, three teaspoons of garlic powder, a teaspoon of ginger powder, two teaspoons of onion powder, two teaspoons of dried mango powder (amchur), 3-4 teaspoons of oregano, a teaspoon of black pepper, two teaspoons of sugar, a teaspoon of salt, and half a teaspoon of black salt.
Roast chillies
Start by removing seeds from dried red chillies and toast them lightly in a pan until fragrant. Let it cool down.
Roast cayenne pepper
Now, add cayenne and roast it slightly. Blend dried red chillies with cayenne pepper into a fine powder.
Blend ingredients
Add prepared spice powder, onion powder, garlic powder, ginger powder, amchur, oregano, and black pepper to a mixer. Grind it into a fine powder.
Adjust seasonings
Now, add rock salt, sugar, and salt to the mixture. Blend it again into a smooth powder. Pass the mixture through a sieve to remove coarse particles.
Store and serve
Transfer the peri-peri masala into an airtight container. Use it as a seasoning with French fries, popcorn, makhana nachos or khakara.
