Ingredients
Two pounds ripe mangoes, one and a half cups white sugar, three-fourths cup water, three saffron threads (Optional).
Prepare the Mangoes
Peel, chop and mash them into small pieces, tossing aside the pit until very smooth. If you like your jam with a bit of texture, leave some small chunks of mango.
Cook the Mango Mixture
Take the mashed mangoes and place them in a large pot along with the water and white sugar. Stir it over medium heat as you bring it all to a simmer.
Simmer and Stir
Let the mango mixture simmer for 30-40 minutes, stirring it periodically to ensure it doesn't burn. You will watch it thicken as you cook it on the stove.
Add Saffron (Optional)
If you are using saffron, add the saffron threads at this time. This will provide subtle colour and flavour enhancement. Whisk these into the mixture well.
Check Consistency and Cool
When the jam has thickened to your desired consistency, remove it from the heat. Now, allow it to cool before pouring/shifting it into sterilised jars.
