Ingredients
Two ripe mangoes, a half cup of granulated sugar, two large egg yolks, two tablespoons of fresh lime juice, and two tablespoons of unsalted butter.
Prepare the mango
Prepare the mango puree and granulated sugar in a saucepan over medium-low heat and gently stir until all of the sugar is dissolved completely.
Whisk together
In another bowl, whisk together the two large egg yolks until pale in colour and slightly thick, making for a nice egg base.
Prepare mixture
Gradually whisk the warm mango mixture into the beaten egg yolks, a little at a time, to temper the eggs and keep them from scrambling.
Stir it well
Put back in the pan and add a little low heat, where it is constantly stirred until the good thickening of curd occurs.
