Ingredients
Half cup ghee/clarified butter, one block ice, two cups maida/ plain flour/refined flour, half cup milk, three cups water, one tsp lemon juice, one cup sugar, one-fourth cup water, oil/ghee, dry fruits, one-fourth tsp cardamom powder, silver vrak.
Add maida
Rub in the ghee with the ice, add maida and sizzle. Then the mixture is added to chilled milk.
Add cold water
Add the cold water and lemon juice, mix well until a smooth batter of pouring consistency is formed.
Pour batter
Pour two tablespoons of batter into hot oil and repeat until the froth settles. Fry the fritters until they are nice and golden and crisp.
Drain and serve
Drain off the tall oil and pour sugar syrup over the sweets. Garnish with nuts, cardamom, and silver-vark or chilled rabri. Serve.
