Ingredients
Half cup moong dal, one carrot, one-fourth cup coconut, a few chopped coriander leaves, one green chilli, two tbsp pomegranate seeds / dalimbe, half tbsp lime juice, salt, half tsp mustard seeds, one tsp urad dal, a pinch of asafoetida / hing, 5-6 curry leaves, one tsp oil.
Soak dal
Soak the dal in water for somewhere between 30 and 60 minutes. Drain all the water and keep it in a strainer overnight to drain.
Grate the ingredients
Grate the ingredients like half a cup of carrot, one-fourth cup of coconut, chop one green chilli, coriander leaves, and half a lemon.
Mix it well
Mix in a bowl all the ingredients, namely, drained moong dal, grated carrot, coconut, green chilli, and coriander leaves.
Add salt
Add salt and lemon juice just before serving. Mixing these two ingredients creates a bright, tangy flavour.
Serve
Tempering needs to be done with mustard seeds, urad dal, curry leaves, and asafoetida. Pour over the salad, toss, garnish with pomegranates, and serve.
