Ingredients
4-6 slices of bread, two tablespoons of chopped onions, one cup of chopped spinach, half a cup of sweet corn, two tablespoons of green chutney, a teaspoon of mustard seeds, 1-2 tablespoons of butter, a teaspoon of salt, a teaspoon of black pepper, a teaspoon of chilli flakes and grated cheese.
Saute filling
Heat a teaspoon of butter and add chopped onions. Saute onions until golden brown and add chopped spinach; cook until soft.
Add corn and spices
Now, add the sweet corn to the pan and saute until soft and tender. Add chilli flakes, black pepper, and chilli flakes.
Assemble sandwich
Now, take two slices of bread and spread green chutney and cheese on one side and prepared corn spinach filling in between.
Toast sandwich
Heat butter or oil on a pan and add the sandwich to it. Toast the sandwich on both sides until golden brown and crispy.
Serve sandwich
Cut the sandwich into two and serve with tomato ketchup or green chutney. Pair this with morning and evening tea.
