Ingredients
Half cup Gram flour, one-fourth tsp SSP Asafoetida (Hing), half cup roasted peanuts, one-fourth tsp turmeric powder, two tsp coriander powder, one tsp cumin powder, half tsp garam masala powder
What else do you need?
One-fourth tsp red chilli powder, one tsp sugar, two tsp amchur, two tbsp kasuri methi, salt, one tbsp mustard oil, 500 grams pointed gourd (parval), two tbsp mustard oil, half tsp mustard seeds, coriander leaves, fresh coconut.
Wash and peel
Wash and peel the parwal. Remove the stalks, make a slit lengthwise, and scoop out the seeds carefully.
Grind
Grind roasted peanuts into powder. In a bowl, add besan, spices, sugar, amchur, kasuri methi and salt.
Add mustard oil
Add mustard oil and very little water into the spice mixture to make a crumbly stuffing. Keep aside.
Stuff the parwal
Afterwards, you need to stuff the parwal with the prepared filling carefully, without breaking the gourd.
Garnish and serve
Cook the stuffed parwal in a hot pan, keeping it covered until soft. Garnish with chopped coriander and coconut.
