Ingredients
One medium-sized lauki (bottle gourd), 2-3 tablespoons of yellow or black mustard seeds, one tablespoon of salt, half a teaspoon hing (asafoetida), one teaspoon black salt, half a teaspoon red chilli powder, two litres of water.
Prepare lauki
Start by peeling and chopping the lauki. If the lauki is bitter in taste, put it in boiling water and cook for 2-3 minutes.
Boil water
Take a saucepan and add water. Boil this for 3-4 minutes and then cool it down to room temperature.
Prepare spice mix
Take a mortar and pestle and add yellow mustard seeds and black mustard seeds to it. Grind it into a coarse powder.
Combine ingredients
Combine the sliced lauki pieces, red chilli powder, mustard seeds, hing, salt and water in a big ceramic pot or jar.
Ferment kanji
Stir it well to combine ingredients, then cover it with a lit or loose muslin cloth. Keep this in the sun for 5-6 days to ferment.
Serve kanji
Refrigerate this and serve it chilled or instantly with some ice cubes. Add some coriander leaves and lime juice to enhance the flavour.
