Ingredients
3-4 small beetroots, 2-3 black carrots, one cup of chopped amla, three raw turmeric roots, one tablespoon of yellow mustard seeds, 1-2 green chillies, one and a half litres of water, one-fourth teaspoon of black pepper and cumin seeds, one tablespoon of red chilli powder, and rock salt to taste.
Prepare ingredients
Peel the carrots into thin strips after giving them a good wash. Cut the amla pieces, slice green chillies and grate the raw turmeric into small pieces.
Prepare spice mix
Take a mortar and pestle and add yellow mustard seeds and cumin seeds to it. Grind it into a coarse powder.
Combine ingredients
Combine the sliced carrots, beetroot, amla pieces, grated raw ginger, sliced green chillies, prepared spice powder, red chilli powder, salt and water in a big ceramic pot or jar.
Ferment kanji
Stir it well to combine ingredients, then cover it with a lid or loose muslin cloth. Keep this in the sun for 3-4 days to ferment.
Serve kanji
Refrigerate this and serve it chilled or instantly with some ice cubes. Add some coriander leaves and lime juice to enhance the flavour.
