Ingredients
Two cups of mushrooms, half an onion, two cloves of garlic, one tablespoon of olive oil, two cups of water or vegetable broth, salt and black pepper to taste, and fresh parsley leaves.
Prepare vegetables
Start by thoroughly cleaning the mushrooms. Cut the mushroom into thin slices, chop the onions, and mince the garlic cloves.
Saute mushrooms
Take a pan and heat olive oil in it. Add garlic and mushrooms to the pan and saute it for 8-10 minutes until it is caramelised.
Add vegetable stock
Now, add two cups of vegetable stock to the pan and let it boil. Cook it for 10-12 minutes until it is softened.
Blend ingredients
Now, add the cooked ingredients to a mixer and blend them into a smooth paste. Avoid leaving chunks.
Cook soup
Transfer the blended paste to a pan and add one cup of water with salt and black pepper. Let this simmer for 1-2 minutes.
Garnish and serve
Garnish the soup with fresh parsley leaves and slices of sauteed mushrooms. Serve it warm.
