Ingredients
One cup of lauki peels soaked in water, 3-4 green chillies, half a cup of tomatoes, 6- 8 cloves of garlic, salt to taste, 1.5 tablespoons of lemon juice, a teaspoon of urad dal, half a teaspoon of mustard seeds, one red chilli, oil, to fry.
Soak lauki peels
Wash lauki peels properly and soak them in water for 30 minutes. Strain the water and cut the peels into small pieces.
Saute lauki peels
Heat oil in a pan and add green chillies, tomatoes, garlic and lauki peels. Fry it for five minutes until soft and crispy.
Add seasonings
Add red chilli powder, salt, and chopped garlic, Saute them again until the chillies change colour.
Grind chutney
Add the sautéed spices to the mixer with half a cup of water. Grind it into a smooth, creamy paste.
Prepare to temper
Heat oil in a pan; add mustard seeds, urad dal and red chilli. Heat them until they start to sputter.
Serve
Add the prepared tempering to the chutney and mix it well. Serve the chutney as a side with pori, paratha or chilla.
