Ingredients
6-10 slices of bread, one litre of milk, one cup of sugar, one-fourth teaspoon of ground cardamom, one-fourth teaspoon of ground cinnamon, one tablespoon of unsalted butter, one tablespoon of chopped almonds or pistachios, ghee, saffron strands, and a teaspoon of rose essence.
Prepare bread slices
Cut the edges of bread slices and slice them into triangles. Toast the bread slices in ghee from both sides until golden brown.
Prepare sugar syrup
Take a saucepan and add sugar with water. Let the syrup boil on medium flame until it starts to thicken.
Prepare rabri or milk syrup
Boil milk until it is reduced to half. Add sugar, cardamom powder, rose essence, and saffron to it. Stir the milk until it starts to thicken.
Soak in sugar syrup
Take the fried bread slices and soak them in sugar syrup for one minute. Put the soaked bread slices on a plate.
Assemble the shahi tukda
Create a layer of fried bread slices and pour the prepared rabri mixture over it. Coat the bread slices nicely.
Garnish and serve
Garnish the shahi tukda with chopped almonds and pistachios on top. Add a few rose petals and serve it warm. You can also refrigerate it for 2-3 hours and enjoy it chilled.
