Ingredients
One whole coconut, one tablespoon of coconut curd culture, 1-2 cups of water, extracted coconut water, and 1-2 green chillies.
Prepare coconut
Break open the coconut and separate the coconut water from it. Break the coconut into smaller pieces.
Extract coconut milk
Take a mixer and add coconut water, water and coconut pieces. Blend it into a smooth paste until there are no lumps.
Squeeze milk
Now, take the blended milk and pour it into a muslin cloth. Squeeze it well to extract the smooth coconut milk.
Heat coconut milk
Take a pan and add coconut milk to it. Heat it on a low flame for 2-3 minutes. Stir it continuously to avoid curdling or burning.
Set curd
Let the coconut mik cool down to room temperature and transfer it to an earthen pot. Add one tablespoon of coconut curd culture or slit open green chillies.
Ferment and freeze
Cover the earthen pot with muslin cloth and refrigerate overnight or 24 hours to ferment. Sweeten the curd by adding honey or vanilla extract.
