Ingredients
One cup of cookd rice , one half cups of buttermilk, three tablespoons od curd, 2-3 dry red chillies, half ateaspoon of urad dal, two tablespoons of oil, 5-6 curry leaves, two tablespoon of peanuts, half a teaspoon of red chilli powder, green chilli, mustard seeds, jhong, onion, and salt as per taste.
Start with cooked rice
Take the the leftover cooked rice and mash them lightly using a spoon. This wil giverice a more creamy texture.
Prepare tempering
Heat oil in a pan and add mustard seeds, chana dal, red chillies, hing, and curly laves. Cook until it starts to crackle.
Add tempering
Now, add the buttermilk over slightly warm buttermilk. This will give a more earthy nd tangy flavour. Avoid curdling the buttermilk.
Combine rice and buttermilk
Now add curd and spiced buttermilk to the falttened rice. Mix this well with chopped green chillies and onion.
Serve
Garnish with coriander leaves and lemon juice on top. Serve with pickle and pappad for added crunch.
