Ingredients
Two cups of carrots, one tablespoon of fenugreek seeds, one tablespoon of fennel seeds, one tablespoon of fenugreek seeds, one tablespoon of turmeric powder, one tablespoon of red chilli powder, two tablespoons of mustard oil, salt to taste, and lemon juice.
Prepare carrots
Start by thoroughly washing and peeling carrots. Cut the carrots in thin strips.
Prepare seasonings
Take a pan and add mustard seeds, fennel seeds, and fenugreek seeds. Lightly roast them for two minutes.
Combine carrots with spices
Take a bowl and marinate chopped carrots with prepared ground spices, red chilli powder, black pepper, turmeric powder, and salt.
Heat mustard oil
Take a pan and heat mustard oil until it is smoking hot. Cool it for a bit and add lemon juice to it. Mix this with pickle.
Preserve
Transfer the pickle in a glass jar and keep it in the sun for a few days until the pickle softens. This will also act as a preservative.
