Ingredients
One cup of black carrots, two litres of water, two tablespoons of salt, half a tablespoon of turmeric powder, half a tablespoon of red chilli powder, three tablespoons of yellow mustard seeds, one tablespoon of mustard oil, and a pinch of asafoetida (hing).
Peel carrots
Start by thoroughly washing carrots and peeling them. Cut the carrots into thin strips.
Boil carrots
Take a saucepan and put water to boil. Add carrots to the pan and give it another boil. Turn off the flame and cool it down for 10 minutes.
Add spices
Transfer the water and add salt, turmeric powder, red chilli powder, mustard seeds, asafoetida (hing) and mustard oil. Mix it well to combine spices.
Keep it in sunlight
Transfer the drink into a glass jar and keep it in the sunlight for atleast 3-4 days. This will ferment the drink.
Refrigerate
After the kanji is ready, refrigerate it and store it for 15-20 days.
