Ingredients
Two cups of all-purpose flour, one teaspoon of baking soda, two teaspoons of baking powder, two teaspoons of cinnamon powder, one cup + four tablespoons of vegetable oil, one cup of castor sugar, one cup of brown sugar, four eggs, two teaspoons of vanilla extract, three cups of grated carrots, one-fourth cup crushed walnuts, one-fourth cup of dried cranberries, and the zest of one orange.
Preheat oven
Layer a baking tray with parchment paper and grease some butter. Preheat over at 180°C.
Combie wet ingredients
Take a bowl and add sugar, vegetable oil, eggs, and vanilla extract. Combine the ingredients using a blender.
Combine dry ingredients
Take another bowl and add flour, baking soda, baking powder, cinnamon powder, half a teaspoon of salt, and grated carrots. Combine the ingredients well.
Combine dry with wet ingredients.
Now, slowly start to add dry ingredients to wet ingredients. Stir continuously to avoid forming lumps in the batter.
Bake cake
Pour the batter into the baking tray with orange zest, cranberries, and walnuts. Spread the evenly and bake for about 35-40 minutes.
Serve
Once the cake is baked, let it cool for a few minutes. Add the cream cheese layer on top and decorate with grated carrots and walnuts on top.
