How To Make Andhra-Style Authentic Palak Pachadi At Home For Dinner?

Ingredients

One cup of fresh spinach leaves, 2-3 green chilies, 4-5 cloves garlic, half a teaspoon cumin seeds, a teaspoon mustard seeds, one-fourth teaspoon turmeric powder, one-fourth teaspoon red chili powder, Salt to taste, two tablespoons ghee, a teaspoon chana dal, a teaspoon urad dal, 2 dried red chillies, a tablespoon lemon juice, one-fourth cup water, and a few curry leaves.

Blend ingredients

Take a mixer and add tomatoes, onions, garlic cloves, and red chilli powder. Blend it for 1-2 minutes into a smooth paste.

Prepare tempering

Heat ghee in a pan and add cumin seeds, mustard seeds, chana dal, urad dal, dry red chillies, and curry leaves. Cook it until it starts to sputter.

Cook spinach

Thoroughly wash the palak leaves and chop them into small pieces. Add the blended paste and spinach leaves to the pan.

Add spices.

Now, add red chilli powder, coriander powder, turmeric powder, salt and water to the pan. Suate and cook spinach until it comes together.

Serve

Add 2-3 tablespoons of curd for creaminess. Serve this pachadi with hot rice and warm ghee. You can also have it with idli or dosa.
