Ingredients
One-fourth cup of star anise, two tablespoons of chopped ginger, two tablespoons of chopped garlic, 8-10 red chillies, one tablespoon of rock salt, two tablespoons of jaggery powder, and one teaspoon of cumin seeds.
Soak red chillies
Take a bowl with one cup of water and add red chillies to it. Soak it for 15 minutes and make a fine paste.
Peel and chop
Start by peeling and chopping star anise fruit, ginger, and garlic. Remove the outer peel.
Saute onions
Take a pan and oil, onions, garlic, ginger, salt, red chilli paste, and cumin seeds. Saute it on a low flame for 10 minutes.
Add star anise fruit
Add star anise fruit to the pan and cook it for another 10 minutes. Let it simmer until it thickens.
Add flavours
To balance out the flavours, add jaggery powder and lemon juice to the chutney.
Transfer and store
Let the chutney cool down for a bit and store it in an airtight container. Refrigerate to increase shelf life.
