Ingredients
1-2 cups of chopped potatoes, refined flour, 2-3 cayenne peppers, 2-3 dried red chillies, three teaspoons of garlic powder, a teaspoon of ginger powder, two teaspoons of onion powder, two teaspoons of dried mango powder (amchur), 3-4 teaspoons of oregano, a teaspoon of black pepper, two teaspoons of sugar, a teaspoon of salt, and half a teaspoon of black salt.
Prepare peri-perii masala
Grind peppers, red chillies, garlic powder, ginger powder, onion powder, mango powder, oregano, black pepper, sugar, a teaspoon of salt, and half a teaspoon of black salt.
Prepare the poatotes
Wash and peel the potatoes into finger-like chips or fries. Wash them under cold water and then add them to salted warm water for 30 minutes. Pat them dry with a paper towel.
Marinate the potatoes
Combine refined flour, salt, and a little bit of peri-peri seasoning. Add potatoes to this and marinate for a few minutes.
Fry and coat potatoes
Deep- fry potatoes in small batches until golden brown and crispy. Drain excess oil and add prepared peri-peri seasoning. Shake them well and serve.
