Ingredients
One cup granulated sugar, water, two tablespoons grated fresh ginger, one-eighth teaspoon active dry yeast or brewer's yeast, ginger syrup (ingredients above), three tablespoons lemon juice, freshly squeezed, seven cups filtered water.
Make a Ginger Syrup
Peel and grate ginger. Add it to sugar and water in a saucepan. Keep stirring until all the sugar dissolves.
Strain and Cool the Syrup
Strain the ginger mixture to discard the solids. Let it cool completely and store the syrup in a vial.
Prepare Ginger Ale
Use 3-4 tablespoons of ginger syrup poured in a glassful of ice, then stir in 8 ounces of seltzer water or club soda.
Ferment the Ginger Beer
In a bottle, add the yeast, syrup, lemon juice, and water, then shake and leave to ferment for 2-3 days.
