Ingredients
One cup of chopped beetroot, one-third cup of chopped carrots, one chopped onion, half an inch of ginger, 6-7 garlic cloves, two tablespoons of oil, two tablespoons of butter, one tablespoon of black pepper, salt to taste, half a tablespoon of sugar, and two tablespoons of milk.
Saute onions
Take a pan and add onions, ginger, and garlic with cooking oil. Saute it for two minutes over a low flame.
Add beetroot
Now, add beetroot and carrots to the pan with two cups of water. Saute this for another minute.
Boil vegetables
Put this in a pressure cooker and boil for 35-40 minutes until vegetables get softened.
Blend vegetables
Let the mixture cool down a bit and add it to a mixer. Blend it until smooth and creamy.
Boil soup
Add the blended mixture to the pan and add milk, butter, black pepper, salt, and sugar.
Garnish
Add water according to the required consistency and garnish it with fresh coriander leaves.
