Ingredients
To make sabudana khichdi, you need one cup of sabudana, two medium-boiled potatoes, boiled and diced, 2-3 chopped green chillies, a tablespoon of chaat masala, dried mango powder, one teaspoon of cumin seeds, two tablespoons of roasted peanuts, half a cup of fresh pomegranate pearls, and salt to taste.
Soak sabudana
Start by thoroughly washing sabudana pearls to remove excess starch. Take a bowl of water and soak it for 3-4 hours or overnight.
Roast peanuts
Heat oil in a pan and add peanuts. Roast the peanuts for two minutes until they turn golden brown and crisp.
Prepare the base
Take the same pan and add curry leaves, green chillies and cumin seeds to it. Cook it until it starts to sputter.
Add sabudana
Now, add boiled potatoes, roasted peanuts, and soaked sago to the pan. Add some salt, dried mango powder, and saute it for 4-5 minutes.
Garnish
Garnish with fresh coriander leaves and lemon juice. Toss it well to mix and add pomegranate seeds on top. Serve it hot
