Delicious Coconut Kadhi Recipe For A Wholesome Lunch

Ingredients

One cup of coconut milk, half a cup of besan, half a teaspoon of turmeric powder, a teaspoon of red chilli powder, half a cup of coconut yoghurt, one tablespoon of tamarind water, a teaspoon of mustard seeds, a pinch of hing, 2 green chillies, and 7-8 curry leaves.

Prepare besan mixture

Take a big bowl and add besan, yoghurt, and water. Whisk it well to make a smooth and lump-free mixture.

Prepare to temper

Heat coconut oil in pan and add mustard seeds, curry leaves, hing, green chillies, and ginger. Sautre them for one minute until it starts to sputter.

Cook the kadhi

Now take a pan and add the besan mixture Cook it on a medium flame until it starts to thicken. Stir it continuously to avoid forming lumps.

Add coconut milk

Once it starts to thicken, pour the coconut milk. Add turmeric, salt, and tamarind water for the perfect balance of tanginess.

Fry pakroas

Heat oil in a pan and add the leftover besan batter into small balls. Fry them and strain the oil on a paper towel.

Assemble kadhi

Now, add the prepared pakoras to the kadhi and mix it well. Add the prepared tempering on top and combine.

Garnish and serve

Garnish the kadhi with coriander leaves and lemon juice on top. Serve with ghee-rice and papad for a perfect wholesome lunch.
