Holi will be celebrated on 14th March 2025. Kanji vada is a traditional Holi dish that is prepared across Indian homes. It is a tangy and spicy drink, perfect for the changing weather. Tap to read the recipe for Holi 2025.
Ingredients for kanji
Two litres of water, two teaspoons of salt, two teaspoons of black salt, two tablespoons of yellow mustard, two tablespoons of black mustard, half a teaspoon of turmeric powder, a teaspoon of red chilli powder, 2-3 tablespoons of curd, and a pinch of hing.
Ingredients for vada
One cup moong dal, two tablespoons of urad dal, 1-2 green chilli, one inch of ginger, salt, a handful of mint leaves, 1-2 teaspoons of crushed coriander seeds, half a teaspoon chilli flakes, and one tablespoon of mustard seeds.
Prepare water
Add water to a saucepan and boil it for 3-4 minutes. Let the water cool down to room temperature.
Prepare spice mix
Take a mortar and pestle and add yellow mustard seeds and cumin seeds to it. Grind it into a coarse powder.
Prepare vada batter
Add soaked moong and urad dal, green chiili, ginger, mint leaves, coriander leaves, chilli flakes, and mustard seeds. Blend it into a smooth batter.
Fry vadas
Heat oil in pan and add small portion of batter to it. Fry them until golden brown and drain excess oil.
Combine ingredients
Combine the cooled water, red chilli powder, salt, prepared spice, curd, and vadas in a big ceramic pot or jar. Stir it well to combine.
Ferment kanji
Stir it well to combine ingredients, then cover it with a lid or loose muslin cloth. Keep this in the sun for 3-4 days to ferment.
