Ingredients
One small cucumber, half a cup of boiled potatoes, two cups of curd, one-fourth teaspoon of salt, two finely chopped green chillies, a pinch of asafoetida (hing), 2-3 garlic cloves, one-fourth teaspoon of black salt, half a teaspoon of cumin seeds, and one teaspoon of ghee or oil.
Prepare cucumber

Take a mortar and pestle and add cumin seeds, green chillies, and garlic cloves. Blend them into a smooth paste.

Whisk dahi until smooth. Now, add grated cucumber, boiled potatoes, turmeric powder, red chilli powder and rock salt. Stir it well.
Prepare to temper
Heat oil in a pan, then add asafoetida, cumin seeds, and green chillies. Cook until it starts to sputter.
Assemble raita

Garnish and serve
Garnish the raita with some mint leaves and mustard or olive oil on top. Pair the raita with paratha for a delicious summer lunch.
