Ingredient
One cup of rice, two medium sizes of jaggery (gud), one carrot, one-fourth cup of dry fruits, four tbsp of desi ghee, two cloves, and one black cardamom.
Wash the Rice
Wash the rice thoroughly. Soak the rice in water for almost 15-20 minutes. Afterwards, drain it.
Prepare the Jaggery Syrup
Grate the jaggery and melt jaggery in one cup of water on low heat. Mix it until it converts into a smooth syrup.
Mix the Spices and Dry Fruits
Take a pan and heat desi ghee. Add cloves and black cardamom. Stir for a minute, after that add dry fruits. Fry it until turns golden.
Cook the Carrot
Grate the carrot. Add it to the pan with the ghee, spices, and dry fruits. Stir for 2-3 minutes.
Cook the Rice
Add the soaked rice to the pan and mix well. Add the jaggery syrup and cook on medium heat for about five minutes.
Simmer and Serve
Add enough water to the pan. Cover it, and cook the rice until tender and fluffy. Serve warm with a pinch of coriander!
