Ingredients
250-300 grams, two cups of curd, one-fourth teaspoon salt, two finely chopped green chillies, a pinch of asafoetida (hing), 5-6 garlic cloves, one-fourth teaspoon of black salt, half a teaspoon of cumin seeds, and one teaspoon ghee or oil.
Preapre bathua
Start by thoroughly washing and cleaning the bathua leaves. Chop the bathua into smaller pieces.
Boil bathua
Put the chopped bathua leaves in a pressure cooker with water. Boil the bathua leaves until soft and drain the water using a sieve.
Grind bathua
Take a mixer and add boiled bathua with green chillies and garlic cloves. Grind this into a smooth paste.
Churn curd
Take curd and churn it a bit. Now, add the prepared bathua paste with black salt and salt. Give this a good swirl to combine ingredients.
Prepare to temper
Heat oil in a pan, then add asafoetida, garlic cloves, cumin seeds, and green chillies. Cook until it starts to sputter.
Serve raita
Add the prepared tempering on top and serve the raita as a side dish with stuffed paratha.
