Ingredients
2-3 boiled sweet potatoes, one mashed avocado, 7-8 cherry tomatoes, crumbled paneer, feta cheese, lemon juice, chilli flakes, rock salt, sunflower seeds, and crushed walnuts.
Prepare vegetables
Start by peeling and slicing the beetroot into big rounds, mash the avocado properly and chop the cherry tomatoes.
Add the spices
Now, add lemon juice, salt, pepper, and red chilli flakes to the chopped tomatoes and avocados. Combine it well.
Assemble the sandwich
Now, take sweet potato slices as a base and roast them on one side. Now, put the prepared filling inside.
Layer and serve
Layer the sandwich with crumbled paneer and feta cheese and garnish with crushed walnuts and sunflower seeds on top. Serve it with mint chutney.
