Ingredients
1 ½ cups sabudana, 3 medium potatoes, 3 tablespoons roasted peanuts, 2 tablespoons fresh coriander leaves, salt, ½ lemon, 2-3 green chillies, 1 teaspoon sugar, oil for deep frying, fresh mint leaves.
Soak Sabudana
Wash the sabudana thoroughly to remove any dirt. Soak it in enough water for 4-6 hours or overnight until it softens and absorbs the water. Drain off excess water before use.
Prepare the Potatoes
Peel and boil the potatoes until soft and tender. Once done, mash them well to a smooth, lump-free consistency. The mashed potatoes will bind the mixture together for the kebab.
Prepare the Kebab Mixture
In a bowl, combine the soaked sabudana, mashed potatoes, crushed roasted peanuts, chopped green chillies, fresh coriander leaves, sugar, salt, and lemon juice. Mix everything until it forms a thick dough-like mixture.
Shape the Kebabs
Divide the mixture into equal portions and shape them into round or oval patties. Ensure they are firm enough to hold their shape during frying without falling apart or becoming too soft.
Fry the Kebabs
Heat oil in a pan over medium heat. Once hot, gently slide the shaped kebabs into the oil. Fry them until golden brown and crispy on both sides. Remove and drain excess oil.
