Ingredients
Two cups of rice, two cups of water, one tablespoon of grated ginger, 2-3 chopped green chillies, half a cup of grated carrot, two tablespoons of ghee, 1-2 dry red chillies, two tablespoons of mustard seeds, two tablespoons of urad dal, a pinch of hing (asafoetida), curry leaves, milk, salt and chopped coriander leaves.
Combine curd and rice
Cook rice and let it cool down to room temperature. Add curd to the boiled rice and mix it well to combine.
Add vegetables
Chop carrots, green chillies, ginger and coriander leaves. Add these chopped vegetables to the curd and rice.
Prepare to temper
Heat ghee in a pan and add dry red chillies, mustard seeds, urad dal, hing, and curry leaves. Heat it until it starts to sputter.
Add milk
Now, mash the curd rice well with your hand and add some milk to it. Stir it well to combine the ingredients.
Serve
Add some chopped coriander leaves on top. Serve this with some pickle and appam on the side for a comforting summer meal.
