Ingredients
Two cups of rice, a teaspoon of mustard seeds, a teaspoon of black gram, a teaspoon of chan dal, 5-6 curry leaves, 2-3 green chillies, 1-2 dry red chillies, two tablespoons of lemon juice, 3-5 cashew nuts, 8-10 peanuts, a teaspoon of red chilli powder and turmeric, and salt to taste.
Prepare rice
Start by thoroughly washing the rice and straining the water. Cook rice with two cups of water for 2-3 whistles.
Roast ingredients
Heat oil in a pan and add black gram, urad dal, chana dal, and mustard seeds. Roast them until nutty brown.
Prepare tempering
Heat mustard oil in a pan and add curry leaves, red chillies, green chillies, and and turmeric. Cook until it starts to sputter.
Saute dry fruits
Add cashews, peanuts, eon juice and salt to a pan. Sauté the dry fruits until golden brown and crispy.
Add cooked rice
Now, add the cooked rice to the pan with tempering, roasted nuts, and roasted ingredients. Combine and spread it evenly.
Garnish and serve
Squeeze some lemon juice on top and garnish with fresh coriander leaves. Serve it with curd and pickle on the side.
