Ingredient
Two cups coriander leaves, one cup besan/gram flour/chickpea flour, one tsp ginger-garlic paste, half tsp Kashmiri red chilli powder / lal mirch powder
What else you need?
Half tsp turmeric/haldi, one green chilli, half tsp coriander powder, half tsp cumin powder, one tsp sesame seeds / til, one fourth tsp garam masala powder, salt, one tsp lemon juice, one fourth cup water, oil.
Prepare the dough mixture
Mix coriander, besan, ginger-garlic paste, spices, lemon juice, and water into a thick dough in a bowl.
Shape the Vadi
Grease a plate and press the dough into an even layer. Make it smooth with a spatula. Let it rest.
Cut into pieces
Cut the dough into square or diamond shapes using a knife after it rests for 5 minutes.
Steam the Vadi
Grease a steamer, place the cut pieces, and steam for 10-12 minutes until firm and fully cooked.
Fry the Vadi
Heat oil in a pan and shallow fry steamed pieces until golden. It is crispy on all sides, flipping carefully.
