Ingredients

One tbsp ghee, one tsp cumin, one bay leaf, four cloves, two pods cardamom, one-inch cinnamon, half onion, three chilli, one tsp ginger garlic paste, half tomato, one cup of beetroot, two tbsp beetroot, one fourth tsp garam masala, one tsp salt, two tbsp mint, one cup basmati, two cup water, one tsp lemon juice, two tbsp coriander.

Heat ghee

Heat one tbsp ghee, add cumin, bay leaf, cloves, cardamom, and cinnamon. Mix for a minute until fragrant.

Stir onions

Add the sliced onion and stir until golden. Then add the green chillies and ginger-garlic paste and cook for two minutes.

Cook tomato and beetroot

Add chopped tomato, and cook soft. Add grated beetroot, garam masala, and salt. Stir for 2-3 minutes.

Add rice and water

Add washed basmati rice, mint leaves, and two cups of water. Stir well, and bring to a boil.

Cook, garnish

Cover and cook on low for 10-12 minutes, or one whistle. Fluff the rice, add lemon juice, and garnish with coriander.
