Ingredients
Take a bowl and add sooji, water and curd. Whisk it well to combine until there are no lumps. Add ENO to the ferment and rest the batter for 10 minutes.
Add vegetables
Now, add chopped green chillies, carrots, capsicum, tomato and onion to the batter. Stir it well to combine the batter.
Add spices
Now, add chopped coriander leaves, black pepper, red chilli powder and salt to the batter. This will balance the flavours.
Prepare sauce
Take another bowl and add tomato ketchup, chilli sauce, chilli flakes, and oregano. Stir it well to combine.
Assemble the toast
Now, add the prepared sauce on one side and add the prepared batter on top. Cook it until golden brown and crispy on both sides.
Serve
Cut the bread into two diagonal pieces is done. Sprinkle some oregano on top. Serve it with mint chutney on the side.
