INGREDIENTS
To follow this recipe, you will need 500 grammes of carrots, one cup of unsweetened milk, 1/4 cup stevia, two tablespoons ghee, 1/4 cup chopped nuts, and 1/2 teaspoon cardamom powder.
GRATE CARROTS
Take 500 grammes of carrots and wash them with water. Then grate the carrots with the help of a grater.
SAUTE CARROTS
Now, add two tablespoons of ghee to a pan on medium heat and sauté the grated carrots until they soften.
ADD MILK
Pour in one cup of unsweetened milk and allow the carrots to cook until the milk reduces and thickens. Stir occasionally for 10–15 minutes.
ADD STEVIA
Now, gradually add 1/4 cup of your stevia and continue to stir it until it gets mixed.
ADD CARDAMOM
Add 1/2 teaspoon of cardamom powder for flavour. Cardamoms provide a tempting aroma and taste to the halwa.
ADD NUTS
In a separate pan, lightly roast 1/4 cup of chopped nuts. Add the roasted nuts to the halwa mixture. Optionally, you can add raisins for sweetness.
FINAL TOUCH
Continue cooking until the halwa reaches your desired consistency. Serve the diabetic-friendly Gajar Halwa in moderation.
