Ingredients

Eight eggs, two cups whole wheat flour, salt, one tablespoon oil, four tablespoons onion, four tablespoons tomato, four tomato coriander, four tablespoons green chilli, one tablespoon turmeric powder, three tablespoons red chilli powder, two tablespoons cumin powder.

Prepare the Dough

Mix all together, salt and whole wheat flour and gradually add the water to make a soft dough. Cover the dough and let it rest for 10 minutes.

Make Egg Filling

Heat the oil in the pan, and stir-fry the onions, tomatoes, and chillies, followed by turmeric, chilli powder, cumin powder, salt, scrambled eggs, and finally coriander.

Assemble Paratha

Divide the made dough into balls, roll each into a disc, put an egg mixture in between, fold in the edges, and roll again.

Cook Paratha

Put tawa on medium-high and fry stuffed paratha, letting it turn golden brown on both sides. Add spoonfuls of oil to the paratha to fry until crisp.

Serve It Hot!

Parathas are served hot and accompanied by yoghurt, chutney or pickle. It is a delightful morning breakfast meal.
