Ingredients
3-4 sweet potatoes, 2-3 tablespoons of oil, 9-10 garlic cloves, 2-3 green chillies, a teaspoon of cumin seeds, two teaspoons of tamarind pulp, one tablespoon of water, a few curry leaves, a few coriander leaves, salt and pepper to taste , two tablespoons of jaggery, half inch of ginger, and half a lemon.
Roast sweet potatoes
Take a griller or apn and brush oil opn it. Roast sweet potatoes until soft and tender. Let it cool down and peel off the skin.
Roast spices
Heat oil in a pan and roast garlic, green chillies, cumin seeds, and curry leaves. Cook it until it starts to sputter.
Mash spices
Using a mortar and pestle, mash the roasted green chillies, garlic, cumin seeds, and curry leaves.
Blend chutney
Now, add mashed sweet potatoes, tamarind pulp, water, salt, pepper and coriander leaves to a mixer. Blend it into a smooth paste.
Combine ingredients
Now, transfer the chutney to a bowl and add the prepped tempering. Squeeze half a lemon top and mix.
Serve
Store the chutney for up to two weeks. Serve the chutney with bread bites, crackers, and chips.
