Ingredients
One cup of carrots, two medium onions, two inches of ginger, 3-4 cloves of garlic, one cinnamon stick, 4-5 basil leaves, one teaspoon of black pepper, salt to taste, two cups of water, one tablespoon of butter, salt, and lemon juice to taste.
Saute onions
Start by heating butter in a pan and add cloves, ginger, garlic, and onions. Saute onions until golden brown.
Cook carrots
Take a pressure cooker and add carrots with water, salt, and ginger. Cook carrots on a low flame for 10-15 minutes until they soften.
Blend carrots
Put the boiled carrots in a mixer with sauteed onions. Blend it for 2-3 minutes into a smooth puree.
Boil soup
Now transfer the carrot puree to a pan and boil it for 2-3 minutes. Add lemon juice, coriander leaves, and salt according to taste.
Serve
Turn off the flame and garnish the soup with some cream and basil leaves. Serve it warm with toast on the side.
