Ingredients
One cup of fresh palak (spinach), half a cup of whole wheat flour, half a teaspoon (salt, cumin seeds, garam masala, red chilli powder, and garlic), one tablespoon of oil, lemon juice, 1-2 green chillies, one cup of chopped paneer cubes, one small chopped onion, and grated cheese.
Prepare spinach puree
Blanch a cup of spinach leaves in hot water for 1-2 minutes. Drain the excess water and blend it with green chillies and water into a smooth puree.
Prepare filling
Heat oil in a pan and add onion, red chilli powder, garlic, garam masala, and cumin seeds. Sauté onions until golden brown, then add the crumbled paneer with lemon juice.
Cook rotis
Make small balls out of dough and flatten them. Cook rotis on a pan until golden and crispy from both sides.
Add filling
Now, add the prepared filling in the centre with grated cheese and onion. Roll it tightly like a wrap and cover it with foil.
Serve
Add this to the lunchbox with a pickle and a box of curd on the side. This is a nutritious and healthy meal for your kids.
