Ingredients
8-10 kokum petals, one cup of dry coconut, 1-2 green chillies, 1-2 cloves of garlic, a pinch of cumin powder, coriander leaves (chopped), a pinch of hing (asafoetida), salt, amchur water, black salt, half a cup of water, and coriander leaves.
Soak kokum
Take half a cup of water and soak the kokum in it overnight. You can also soak it for 30 minutes to release a tangy flavour.
Extract coconut milk
Blend grated coconut pieces with coconut water, green chillies, and garlic into a smooth mixture. Strain and squeeze to extract creamy milk.
Combine the ingredients
Now, take the extracted coconut milk and add the kokum extract to this. Stir it well to combine. Adjust the consistency of the water if required. Strain the mixture to avoid lumps.
Season the sol kadhi
Add salt, hing, amchur water, and cumin powder to this and mix it well. Garnish with coriander leaves and serve it chilled.
