Ingredients
One large onion slice, two medium-sized capsicum, three medium-sized tomatoes, two garlic cloves, half inch ginger, two green chillies, one tbsp oil, one tbsp degi red chilli powder, half tsp turmeric powder
What else you need?
Salt, one-fourth tsp sugar, one cup fresh tomato puree, water, half cup cheese, 3-4 egg, half tsp olive oil, coriander leaves, spring onion, pinch of degi red chilli powder.
Stir the Aromatics
In a pan, heat oil. Add sliced onions, chopped capsicum, garlic, ginger, and green chillies. Mix till it gets softened.
Add Spices and Tomatoes
Prepare a mixture of Degi red chilli powder, turmeric, salt, and sugar. Add chopped tomatoes and cook till it gets mushy.
Pour Tomato Puree and Simmer
Now add fresh tomato puree and some water. Let it simmer until the sauce thickens and the flavours blend well.
Add Eggs and Cheese
Make small wells in the sauce, crack eggs into them, sprinkle cheese, and cover. Cook until eggs are set.
Garnish and Serve
Drizzle olive oil, sprinkle coriander leaves, spring onions. A pinch of red chilli powder. Serve it hot with bread.
