Ingredients
Four cups of roasted watermelon, a teaspoon of roasted cumin powder, a teaspoon of black salt, a handful of mint leaves, two lemons and ice cubes.
Grill watermelon
Roast watermelon in a grill or in a pan for 2-3 minutes until it is soft and mushy on both sides. Blend it well to extract the juice.
Strain the juice
Use a mesh cloth or sieve to separate the softened pulp from the liquid. Remove the seeds and press the pulp.
Prepare spices
Now, add watermelon juice with sugar, red chilli powder, cumin powder, peppercorns, and salt. Simmer it till reduced by half.
Season and serve
Season the watermelon panna with crushed mint leaves and lemon juice. Add crushed ice and serve it chilled.
